Coconut Yummies Recipe

Melt a cup of coconut oil in the oven or a toaster oven.  You can also melt your coconut oil by placing the container in hot water in the sink.  Either method can take a few minutes, but do not use a microwave just because it may be quicker!  Next, I stir in half a packet of stevia and about 20-40 drops of flavored stevia.  Optionally, you can open up four or five capsules of Pau D’ Arco and mix them in too.  Pau D’ Arco is an herb commonly used for its anti-microbial properties, but it can add an almost chocolate-like taste to the coconut oil.  As an alternative, you can add cinnamon or mint if you prefer those flavors.

To mold the coconut oil into little treats, I use silicone mini-muffin baking dishes like the ones found HERE.

I put about a tablespoon or a tablespoon and a half in each mini-muffin hole and put the batch in the fridge to harden.
