I have split the low carb choices into two categories; “Very Low Active Carbs” and “Low Active Carbs.” Most people can eat as much of the Very Low Carb choices as they like. Though the active carb count may be similar between these two categories, the Very Low Carb choices contain a smaller percentage of carbohydrate, when looking at the whole food. Therefore, the choices in the Very Low Active Carbs list will often spike insulin less than those foods in the Low Active Carbs list.
